Whicher Ridge Mademoiselle V Viognier is grown in a hidden valley in the Whicher Range at Geographe. The gravelly ironstone hillside plantings and cool winds at night produce distinctly flavoured fruit.
The grapes are handpicked and crushed into an open topped fermenter. They undergo extended skin contact to extract flavours and tannins from the skins. After several hours the juice is basket pressed and chilled slightly.
The cloudy juice begins fermentation with wild yeasts in tank, then is transferred to seasoned French oak and a cultured yeast is added. The wine remains on yeast lees for 12 months with stirring as required.
Bright straw green, Whicher Ridge Mademoiselle V Viognier has powerful, lingering tropical fruit flavours with creamy texture, crisp acidity and fine tannins. Cellaring potential is five years.
